Sourced from a family owned farm La Laguna, located in La Calera, a community in the municipality of Popayán within the department of Cauca, Colombia. José Arlex Olave Victoria, his mother Victoria, and his 17-year-old nephew, Norman, manage the family farm together. There are labor shortages in La Calera making it challenging to find enough coffee pickers during the harvest. This caused José Arlex to begin leaving cherries on the coffee trees longer. This practice has made it easier to remove the mucilage during the fermentation process and actually led to better cupping score.
