La Indonesia has been known for exceptional coffee production over the last 40 years. The producer, Frank Torrez, is becoming widley known for innovation with his post-harvest processing techniques. This Natural Bourbon is a must-try coffee: after floating the cherries to remove defects, the coffee is fermented in water tanks for 48 hours, followed by 60 hours of dry in-tank fermentation to maximize the development of flavor and complexity. The coffee is then dried for 20 days on raised beds.

We scored this coffee at an 88, this is perhaps the highest-scoring coffee to come across our table over the last 3 years.
