La Indonesia has been known for exceptional coffee production over the last 40 years. The producer, Frank Torres, is becoming widely known for innovation with his post-harvest processing techniques. This Natural Bourbon is a must-try coffee: after floating the cherries to remove defects, the coffee is fermented in water tanks for 48 hours, followed by 60 hours of dry in-tank fermentation to maximize the development of flavor and complexity. The coffee is then dried for 20 days on raised beds.
